San Pancho Catering El Paellero & A Taste of Spain

San Pancho Catering Service El Paellero Celebrates Spain
Flamenco? Tapas? Paella?

San Pancho Escuela del Mundo to Host Night of Flamenco, Tapas, & Paella

Watch out, San Pancho, Spain is coming to pay a visit with San Pancho catering El Paellero and the parents creating delicious tapas and all are serving up a delicious menu on the Riviera Nayarit! Flamenco?  Check! Sangria? Check! Paella? Check! Mark your calendar for a evening to remember in San Pancho, Mexico! On February 4, 2013 at 6:00pm, the San Pancho school Escuela del Mundo will be hosting it’s annual fundraiser, and this year the theme will be decidedly Spanish.  The event will take place at the location of La Playa restaurant, on the San Pancho beach.

You’ll open your ears to the strumming of Spanish guitar music and you’ll open your eyes to the flowing skirts, tapping heels, and elegant flourish of Flamenco style dancing.  Grupo Alegría, flamenco performers from Spain via Guadalajara, will be entertaining throughout the night with dancing on the San Pancho beach.

Your taste buds will be delighted as San Pancho catering service El Paellero brings the paella and parents are making a variety of tapas!  Paella is an classic old world recipe not to be confused with the tortillas used to wrap tacos here in Mexico.  Tortilla española is also known as “Spanish Omelette” and is typically made as a thick egg and potato dish fried in olive oil.

The culinary highlight of the San Pancho community event will be enormous pans of “Mar y Tierra” paella served by El Paellero catering.  El Paellero catering service provides paella group meals to Sayulita, the Riviera Nayarit, and also covers San Pancho catering events.

El Paellero San Pancho catering plans to pull out “El Paelleononon,” (aka  “One Darn Big Paella Pan”) to serve well over one hundred supporters of Escuela del Mundo. Fresh local catch-of-the-day fish, delectable San Blas prawns, and calamari will share space in the paella with chicken, chorizo, veggies and saffron infused rice. the students parents are making and bringing all kinds of delicious tapas for this special event. Everyone is in on the cooking, so come hungry!!

Tickets for the event are $300 pesos each, (additional donations gladly accepted!) and will raise money for Escuela del Mundo, San Pancho’s Montessori school.  The admission includes tapas, paella dinner, the flamenco show, plus one sangria or other beverage.  Reserve a seat now by calling 311-258-4441, or use PayPal to make payment directly to escueladelmundo@yahoo.com.mx for will-call reservations.  Parents will also have paper tickets for sale, so ask around!

Escuela del Mundo educates Mexican and ex-pat students from age 3 to 12 (pre-K to grade 6) and draws from the San Francisco (San Pancho) area, including Sayulita to Lo de Marcos and beyond.  Escuela del Mundo’s non-profit parent cooperative-run kindergarten and elementary school in San Pancho is committed to an interdisciplinary, holistic approach to learning using the Montessori Method.  Instruction is in Spanish and includes alternative studies such as yoga, meditation, music, environmentalism and the arts.

If you are traveling to the Riviera Nayarit area for an extended stay with young kids in tow, it’s interesting to note that Escuela del Mundo will accept students for a minimum term of at least one month.  Consider enrolling in Escuela del Mundo!

For more information on Escuela del Mundo, refer to the school’s website at http://escueladelmundo.org, and watch this lovely video on YouTube by Sayulita’s The Mango Tree Project:  http://www.youtube.com/watch?v=TywH-G215OU.

Whether you have kids or not, please come out for a terrific evening, colorful entertainment, and a unique and delicious dining experience.  To find La Playa restaurant, take San Pancho’s main street all the way from the highway, through town, to the end of the line as the street meets the beach.  Listen for flamenco, sniff for saffron, and you’ll be there.  ¡Ole!

Birding San Pancho

How can we help birds and bird habitats in San Pancho?
The principle of conservation is:
“We Conserve what we Love, we Love what we Know and we Know what is Shown to us”.
In order to make both locals and visitors aware of the amazing bird (and biological) diversity we have in and around our village, the San Pancho Bird Observatory is promoting the project “Informative Signs for Birding Trails in San Pancho” which consists placing fully-bilingual signs printed on vinyl, in full color on both sides and mounted on wooden frame.
The signs will be placed at key public routes for bird watching in San Pancho. These signs will have the latest telecom technology by displaying “zebra codes” which will refer users to websites with maps, sponser pages and check-lists.
The aims of this project are:
1) Promoting San Pancho as a birdwatching-friendly destination, while
2) Enhancing economic development through the promotion of businesses, organizations and individua
ls who support this initiative and 3) Inspire locals and visitors on the local birds and habitat which will support the conservation of birds and their habitats through the increased knowledge of biodiversity in San Pancho.
This project already has the support of some local businesses, individuals and organizations as well as regional, national and international academic and governmental institutions supportive of bird conservation.  Birds and their habitats need YOUR help!

New Location for San Pancho Restaurant Maria’s

San Pancho Restaurant Maria’s Celebrates New Location

Maria as moved her San Pancho restaurant, Maria’s Restaurant & Bar for the fourth time on the Riviera Nayarit in Mexico, and you are going to love their new location on the main avenue, along with the new restaurant design!
Of course this San Pancho restaurant has the same terrific food, and with the new space there is plenty of room for parties & celebrations, as well as a nice long breakfast style bar to sit at for the single folks, to come in for a drink, or folks that want to do a little work on the computer, as the WiFi is free and works great.
Click on the links and photos to discover more! Here is a story written by Maria about how this family owned and operated San Pancho restaurant, Maria’s Restaurant & Bar came into being and which is now a locals favorite today.

Maria’s Story
“I moved to Puerto Vallarta to study, when I was 15 years old, and also held a job while I was in school. When I finished school, I worked in a Clothing store for few years, then I found Carlos O’brians, my second job.
I then worked at Hard Rock Cafe for about one  year I working in the store, then was moved to the restaurant area, and that is when the restaurant business came into my life.

Four Seasons was coming to Punta de Mita and I decided to apply and got the job, I worked there for almost 4 years as a waitress and bartender, later I got in love with Le BIistro Jazz Cafe restaurant in Puerto Vallarta.
In my mind, the idea to open a San Pancho restaurant was always there, and one day my sister who has a real state office called me, and she asked me if I l wanted to moved back to my home town, San Pancho, and I told her yes, and that I was ready for a change!
I worked for my sister for only one year, as the San Pancho Restaurant Business Is what I really liked and wanted to do.
I opened the San Pancho restaurant Maria’s Restaurant & Bar in 2005, then Andrès, by boyfriend then, (and who now is my husband), added to my project and we are still here, 7 years later! (photo right)
He worked in several restaurants in Puerto Vallarta, then he went to Seattle area to work and lived there for around 8 years, and he got all the experience he needed! Andres enjoys cooking, and cooks with love, and you can tell that he is doing what he loves especially when you taste the food!
We moved our San Pancho restaurant, Maria’s Restaurant & Bar, 4 times looking for a better location and better rent, but finally we are working our of our own space! Its so exciting for us. Come and visit our new location in San Pancho, Nayarit, Mexico. Its easy to find on Main street, on the right hand side of the street going towards the ocean and the San Pancho malecon. We look forward to meeting you!”

Maria’s Restaurant & Bar has live music every Friday with the band Mango, a duo from La Cruz de Huanacaxtle. These two folks, Alfredo and Zoe are amazing music artists, and will keep you returning every Friday.
The restaurant was packed last Friday, as it was also Dia de los Muertos (Day of the Dead), and it was so much fun! Bob Farmer stopped in with his family after the Dia de los Muertos event down on the malecon, all dressed up!

The amazing and beautiful music was the perfect volume, the Arrachera was so tender, and Ahi Tuna Tartar was amazing. Mix that with tasty margaritas, good friends, meeting new friends,  along with laughing and you are having a good time! San Pancho restaurant Maria’s Restaurant & Bar is a local’s favorite, and are open for Breakfast, Lunch and Dinner. You may want to call for a reservation, or write to them on their contact form!

San Pancho Community Dia de los Muertos Celebrations

San Pancho Community Celebrations of Dia de la Muertos in Mexico

Its that time of year again, and the San Pancho community celebrations for Dia de la Muertos, or Day of the Dead,  starts today, November 1st, and November 2nd in San Pancho on the Riviera Nayarit and all of Mexico, with elaborate altars and costumes as they celebrate and honor their deceased loved ones by celebrating life.
November first is the day that celebrates those who died as children and is called the “Day of the Little Angels” or All Saints Day, and November second is to celebrate the adults, and is also known as All Souls Day.Day of the Dead: photo courtesy Mano a Mano: Mexican Culture Without Borders

This 3000 year old ritual began in the month of August, which is the 9th month of the Aztec Solar Calendar, and they celebrated for the entire month by honoring the memory of their dead.
Mourning and rejoicing; sadness and and crazy parties in the cemeteries and elaborate alters are all part of this tradition. Mexican families join in reunion  for fiesta in honor of their deceased loved ones.

Mexican Afterlife Beliefs
Some Mexicans in the San Pancho community and all over the world have a different view of the afterlife. They believe you keep your identity when you die, returning for the Dia de los Muertos. They decorate elaborate alters with different skeletons that are painted and dressed up to honor their loved ones, showing that they honored and are not forgotten, as these altars guide the spirits home. People also dress up like Catrina or skeletons as part of the celebration with amazing face makeup and costumes.

This is the reason that you see the Mexican folk art of the skeletons or calacas, which are also sold everywhere all over the Riviera Nayarit and Mexico. These fancy skeletons are made out of everything that you can think of!
They love to make them from chocolate and sugar for the children.
The elements are an important part in an altar, with water, earth and salt. The alters are constructed in layers. On one side of the altar clothing from the deceased is laid out, in the center of the first level a photograph and a path to the earth, and incense and colored paper that symbolize the life and death aspects.
Skulls, candles and marigolds are placed at the altar, along with water, bread, corn and fruit for the offering for the feast along with music and singing. There are often contests for the best altar.

Catrina, the Lady of Death

La Catrina, or also la Flaca, la Huesuda, la Pelona are a fixture throughout the Riviera Nayarit and all of Mexico. You will these skeletons everywhere dressed up in many different elaborate costumes.

Catrinas make beautiful collectors items, or a wonderful piece of Mexican Folk Art for your home or a terrific gift for a friend.

She is not a fancy model…this lady is la Muerte….and that is a lady of death!

San Pancho Turtles

The San Pancho Community turtle season 2012 is still going strong, and as of right now we have recorded 1,234 nests on San Pancho Beach and Playa Questos.  In fact, there have been more nests laid on the beaches in the past 3 months than were laid for the first nine years of the turtle program combined.  (1991-1999)   While those statistics make us turtle people really, really  happy, they also make us really really TIRED!!  Luckily we have a great group of volunteers who literally work around the clock to make sure everything runs (fairly) smoothly.  Our volunteers this year have come from Australia, Mexico, USA, Canada, Ireland, Chile, Germany  and England. These volunteers pay all their own expenses, work hard in all weather and all hours and most of the time get no recognition for their efforts-but without them the turtle program would not exist,  so if you see our volunteers around town, please show them a little love.  This year with 100% volunteer labor we expanded our box nursery to accommodate 10,000 more eggs and we expanded our beach nursery to accommodate 15,000 more eggs.  Even with those expansions, the box nursery filled to capacity twice and we were forced to use the overflow nursery on the beach.  When the overflow nursery got swamped by waves at the end of August, the box nursery was completely full and we were left with the problem of where to put all the incoming nests.  We could not leave them on the beach because the entire beach was inundated with salt water, and oddly enough, saltwater is lethal to freshly laid turtle eggs.  We were forced to bury the nests high up on the beach, just in front of the houses at the north end.  Those nests are all hatching this week and hatching with great success.  We would like to ask anyone who walks the north end of the beach to please be on the lookout for sea turtle hatchlings making their way to the ocean. If you see a hatching on the sand please pick it up and carry it to the beginning of the moist sand at the water’s edge and let it crawl into the sea on its own.
Hatchings have absolutely no natural defenses and they cannot bite you, sting you or harm you in any way, so they are safe for you to handle. The San Pancho community can call Grupo Ecologico de la Costa Verde any time night or day to report hatchings or adult turtles (or poachers) on the beach and we will send someone right out.
The landline number is 311 258 4100 and the cell number is 322 303 1576.  Thank you for your help!!!

Living in Joy with Kathy Blue
Living in Joy! Energy Healing

Joy of Being
The joy of being is the only true happiness there is , it is why we are here. It comes from with in , it is Who You Are ! Feel the aliveness within you, in your body , in your senses , in your brain.
Take a moment to connect and feel your body, go within, love every inch of you, every sore spot every imperfection . From the top of your head to the tip of your toes, feel your inner pulse, the pleasure of being alive!!
Now take a piece of delicious juicy fruit like a mango or a peach. Look at it touch it, smell it, take a bite let the sweet juice fill your mouth with sensation, feel your taste buds come alive.Chew  slowly and swallow, give thanks.
Look at a beautiful rose, touch its velvet petals, admire its color and shape it’s perfection. Take in the sounds that surround you, inhale it’s perfume and feel the joy within you!

Joyfulness, happiness, aliveness are all about being joy with in us,happy within us, alive in us , being present to all that life has to offer. Like being aroused by a lovers touch let it wash over you, and feel the oneness with each other, Let the sensation expand and embrace that overwhelming feeling of Love!!!

The San Pancho Birding Observatory

SPBO logoThe San Pancho Birding Observatory, which is based on: Conservation based in Science, Education and Community Development is developing quickly in the San Pancho community. Luis Morales, who is head of the SPBO, has some information for us, and the SPBO is only the second bird observatory in all of Mexico!
The SPBO
The SPBO team is working together to bring birding in San Pancho to the next level. Our goal as an organization is to advance bird conservation through science, education and community development, so in order to achieve our goals of community-based biodiversity conservation, we have planned a number of actions such as:·Providing birding tours through SPBO and no longer in the name of Birding San Pancho which was a commercial venture.
For the time being, the website www.birdingsanpancho.com will remain online to provide users with information regarding tours but eventually this information will migrate to the non-profit SPBO´s website www.birdingsanpancho.org
Weekly bilingual bird-id lectures will be offered; such lectures will be oriented both to visitors and locals. Lectures will be arranged by bird family or groups of birds by habitat so that more people in our community are able to identify birds by eye and ear! These will be FUN for everyone in the San Pancho community!

  • Volunteers at different locations will be enrolled in a constant effort bird-monitoring program which will allow us to estimate bird richness and abundance, as well  as the vegetation composition; this information will be crucial to inform decision makers in land management positions to promote better land use, restoration and conservation practices.
  • SPBO is creating informative signs at birding head trails and providing hotels and restaurants with customized brochures that feature maps to birding trails and species  checklists. These will allow tourists to be aware of the incredibly rich bird diversity of San Pancho and the region, making our area a more attractive destination for birdwatchers. So, as you can see there is a lot happening and being prepared for a great 2012-2013 season!

If you want more information on these programs and are willing to support SPBO to support this local San Pancho Community endeavor, please contact Luis Morales at birdingsanpancho@gmail.com.
